I would say Booktype looks like a good idea.

Tried out the demo and it's easy to use, has collaborating options and is
break proof because of version control. Only problems would be no spell
checker built in and no offline use but we can work around that.

To me if we want lots of people to contribute then we have to make the
system as easy to use as possible.
