LVM did not cause this, it can actually provide you with a really nice
way to fix situations like these.

All that should really be in /boot are kernels (and related things,
like initrd). You may have a lot of old ones installed.
Ubuntu should clean up old kernels for itself. Open a terminal, and run
"sudo apt-get autoremove". This should clean out old kernels (and other
things that are no longer needed).
Maybe there is some old cruft there, placed there by mistake? If you
give us the output of "ls -lah /boot", we can tell you exactly what
commands to run in order to free up some space.
Also, since you are using LVM, there is another way of doing this, but
let's focus on the easiest way first - run the first command above, and
see if things work for you now. If they don't, give us the output of
the second, and we'll go from there.
DO NOT START RANDOMLY DELETING KERNEL PACKAGES IF YOU ARE NOT TOTALLY
SURE WHAT YOU ARE DOING! If you decide to use Synaptic to get rid of old
kernels, then be careful, and make sure to leave (at least) the latest
working one, or you will be unable to boot.
