Correct, the Alternate for Xubuntu has been discontinued.

Irecently set up my desktop with RAID, and used the Minimal CD:

This is a tiny iso (30M) which downloads everything you need while you
are installing. After setting everything up (users, disk
configuration, etc) there is a screen you get to which allows you to
select what you wish to install, so you'd want to select "Xubuntu
desktop" there from the list.
