Thanks for the help so far. I have looked further in Google and it says 
that in Xfce the compose key is already set up as Shift AltGr. So I 
tried it out. Here are some examples: café garçon Böse. So I can use 
that without any setting up myself.

The only moan I have is that I have to use two keys (shift and AltGr) to 
do it. I would still like to know how to set up my own choice of compose 
key. Still, this works so I mustn't be ungrateful.
