Of course you can do this, admittedly the options are a little further
removed in the latest release but still there (no hack required).

Open the Software Centre, on the Edit menu choose Software Sources. On the
Updates tab of the next window, untick the sources you don't want (I
recommend you keep precise-security but it's your call).
