Intel works closely with the kernel. H.J. Lu and friends make lots of
commits for Intel. Just about any NUC you buy will be supported. If
you want to ensure support right now for older distros, then buy the
'toc' on the tic-toc cycle to give time for the kernel teams to
backport support for the latest generation processors, chipsets and
boards.
Arrow Lake/14th gen is the latest from Intel, so buy Raptor Lake/13th
gen or earlier. Just about every distro will support 13th gen (and
likely support 14th gen). In fact, I purchased a Raptor Lake/13th gen
in October 2023 (back when Raptor Lake was the "tic"), and it was
supported by Fedora out-of-the-box. Nothing special was needed.
