OT: best FOSS wiki for this classroom scenario?

I don't use the GUI editor, so I have no experience with it, but
others here probably do.

I have no experience with either of those, so I don't know which
of the three would be most efficient or powerful, etc. I can tell you
that you can install MoinMoin from the Ubuntu repositories or without
installing it at all (desktop mode). You can also use it online (like
the Ubuntu wiki) or keep it private and only for your own use:

I had initially grabbed a copy of it to learn MoinMoin so I'd know
how to edit Ubuntu wiki pages, but I quickly discovered that I liked
how it organized information, so I kept it and have used it for years
as my private wiki. Now I wouldn't want to be without it.
