OT: best FOSS wiki for this classroom scenario?

This is almost surely a showstopper in my case. Actually, in my
original message I did not mention that the school uses iPads for
in-class online activities (not my choice) and students are already
using (as test wiki platform only) the wikis at pbworks.com. But the
GUI of that platform, while good at first sight, does not work with
iPads. Not sure where the fault is, but that experience has been
enough to make me want as little hassle as possible from the GUI...

Whatever we use, it will be a private school wiki, no visible pages
for non-registered users, no accounts available for non-students. We
are going to install it now on a Linux AWS install, as temporary
solution, but eventually the whole thing will be moved to a physical
linux server hosted inside the school.

For the moment, DocuWiki wins, because it has practically the same
features as MoinMooin (see here ), including using flat files instead
of RDBMs. Much simpler to handle and migrate!

But further suggestions/experiences remain very welcome!
