upgrading 14.04 LAMP server to 16.04

We have a similar issue here (an older Joomla version not compatible with
PHP7) and decided to upgrade to a version of Joomla that is PHP7 compatible
and upgrade the webservers once the regression testing is complete.  (We
also have a lot of custom code inside Joomla.)

I would really consider testing your code against PHP7 and fixing any
issues that arise and upgrading once you're satisfied it's PHP7 happy.
The performance increase with 7 is worth it, I think.  At least it was for
us.  Besides, at some point 14.04 will be EOL and then you'll either need
to migrate to 16.04 and PHP7 or hope there are no major security issues
that won't get fixed.

Granted, you *can* drop PHP7 and install PHP5 in 16.04 using PPAs, but for
us, that was not much of a long term solution so much as a band-aid.
