Do you run nvidia-settings as root (with gksu or in a `sudo -s` session)?
When you have set the defaults, did you remember to click "save
settings" at the end?
If you are not root, it can't overwrite /etc/X11/xorg.conf and your
settings will not be saved.
If you are root, and saving doesn't work, untick the option to merge
with the existing xorg.conf file. It will back it up and write a new
one, which can be more reliable.
