I don't have an answer to your question about creating a grub menu on a
USB stick, and to be honest this really isn't an Ubuntu question. But I
can perhaps let you know what I do, as I too help friends and do some
site visits at company's to fix their computers - I prefer to do server
and networking work though ;)

What I use for Linux and utility boot ISOs like System Rescue is YUMI -
Multiboot USB creator, the down side is you have to create it from
Windows. You can get more info and download it from
http://www.pendrivelinux.com/yumi-multiboot-usb-creator it's free. I
have a 16G key with Ubuntu desktop/server/knoppix and some AV boot up
disks as well as things like Clonezilla and it works really well! You
could give the custom ISO a go with a Win7 ISO but I'm not sure if that
would work.

I also use a Windows 7 USB boot up key as well which you can create and
download form here:
http://www.microsoftstore.com/store/msstore/html/pbPage.Help_Win7_usbdvd_dwnTool

Now that's enough talk about Windows on an Ubuntu mailing list!! So if
you do need more info I would kindly suggest you post a question on a
relative forum or IRC that's more suited to USB boot keys etc :-)

In any case hope this helps.

Thanks
Keith
