Dual Boot

Install Windows first - then install Ubuntu (that way ubuntu automagically 
sets up grub - the bootloader- for you; if you install windows after ubuntu, 
you have to manually set up Grub)

 (keep in mind that windows likes being on the master (first/primary) hard 
drive on the first partition.)

As far as iTunes is concerned, I havent attempted using an iPod using Vbox 
or VMware, so you'll have to get a response from someone else :)
