setting the default file association for double clicks (gnome / nautilus)

Hello,

 Can anyone tell me how to set the default application associated with a
file/mime type in ubuntu gnome.

e.g.


when I click on file properties -> open with ->

There are a list of applications with check lists but it won't allow me to
change the default.
