setting the default file association for double clicks (gnome / nautilus)

Navigate to a directory containing the type of file you want to
change, in Nautilus.
Right click the file and select properties.
There should be a tab at the top of the resulting dialog labeled "Open
With", select it.
There should not be a list of programs, choose which of those you
want, or click 'Add' if the one you want is missing.
