In that case KOffice is a very poor choice for a first try - it's a
large application, with many dependencies, including the dev stuff for
kde. And to make it worse, Ubuntu is a poor choice of platform for that
as well, as it doesn't give you the build tools by default.

Why not go for a lesser target, one that doesn't have a massive
dependency tree? Wine is an excellent choice for this, and you get
something useful at the end - the possibility of playing your Windows
games on Linux.

Compiling KOffice won't teach you much - it's so big you will probably
blindly enter the './configure && make && make install' targets without
really learning what is going on. The problems you are running into are
more related to Ubuntu's package selection than anything to do with
compiling from source, so you are unlikely to learn much there either.
