customizing the gnome menu

Hey people,

How do I customize the gnome menu? I don't see an app for it. 

In addition to wanting to customize it, there are some things I've
installed that don't show up in it, and I'm wondering why. The gnome
menu doesn't seem to be picking up the Debian menu (ie. from the menu
package).
