I just wanted to point out that you may want to speak more with Danny,
as he's in the process of setting up an Ubuntu system in his school's
computer lab or library (I sorta forget which.) I've explored various
options with him for setting up restrictions on what students can do to
the computer, as well as making it easy and simple to use, so his
knowledge might be valuable for you when it comes to creating a system
that can operate well in an environment where anyone can sit down and
have physical access to the machine.
