Richard, greetings!

I am guessing that you just don't want to see all of your prior versions of
the kernel in your boot listing.  To change this, Look for a menu item in
your /boot/grub/menu.lst file that states,

## controls how many kernels should be put into the menu.lst
. . .

There are a couple of lines printed after that, but you should uncomment the
line that states "howmany=all" and change the line to read "howmany=2" or
"howmany=3".  I recommend at least listing two kernels, in case a kernel
update causes problems with your system.  By listing the prior kernel, you
can always go back to one that you know to be working.

Make sure that you back up your /boot/grub/menu.lst file before editing it.
Also, you will need to use the sudo command give yourself root permissions
to edit this file.

Can I safely install the program that will allow me to read and write to the

You can safely read from NTFS partitions from Linux, but from what I know,
writing to NTFS partitions from Linux is not fully stable at this time.
