One other option to consider: Many mixers nowadays have USB audio built into them. Several of the Behringers do this, and there are a couple of flavors of Alesis MultiMix mixers also.

If you can up your budget a little bit, Allen and Heath have a nice mixer for around $400 that has USB audio:

I do not own any of these however, and I can't tell you how easy these are to set up under UbuStu. I know at least one person on this list has one of the Alesis mixers - care to chime in?
