Go to Edit>Preferences>General>Start and choose 'display home page' (or similar - my system has been in German for the last 3 years), then enter the address of the site you want to be your Firefox start page. Have a look at some of the other settings here too if you haven't already, then close Preferences. The change should update straight away.

There are many long (and tedious) debates about anti-virus on Linux. You can read some of them at www.ubuntuforums.org . Viruses targeted at Windows aren't capable of running on Linux so you are generally pretty safe. But it's still possible to pass on an infected email to a windows user so for that reason I install an anti-virus. I use F-Prot (www.f-prot.com) but another popular one is ClamAV. There are howto guides for installing these at ubuntuforums.org. This site, along with the Ubuntu Wiki, are great resources for info on how to do things.

I don't work with graphics much but the (sort of) Linux equivalent to Photoshop is called GIMP (www.gimp.org). You should have it installed already. if not, go into Add/Remove programs or use Synaptic (these should be in your 'System' menu) to download and install it. As far as Dreamweaver and Flash (creation tools, not browser plugin), you may be out of luck. But I could be wrong on that. Chinese character input I believe is handled by something called SCIM - search ubuntuforums.org again for more info.
Many Windows programs can be run under Linux using something called WINE (www.winehq.org). You may want to check that out too.

Is it Evolution you are using for email? I don't use that program but the easiest way of starting again is to just delete the account from the Account Settings menu and then create a new account (you can also delete the hidden settings folder in your /home directory but I'm not sure which folders Evolution use for this so I wouldn't take that step - at least not from me :) ). Any mails you want to keep should be backed up first of course. I think there's a tool for doing that in the Account Settings menu.
