Hey Tom!
As far as I know, Live CDs often use a swap partition if they detect one. If it is a previously partitioned disk, this could be a reason (but it still is a design mistake). I am not a dev and have not used an encrypted setup before but I can make a suggestion (one more try cannot hurt):

1. Boot into the live environment (not the install).
2. Open a terminal.
3. Find the correct device name for the hard drive with "sudo fdisk -l" without the quotes.
4. Again using fdisk, "sudo fdisk /dev/sd?" without the quotes and replacing the question mark with the correct letter, erase all partitions on the drive (ALL DATA WILL BE DESTROYED). Fdisk is really simple.
5. Write your changes and exit (press w in fdisk). This, hopefully will prevent a detection of swap space.
6. Now try to install it by clicking the install icon on desktop.
