I have to add my good news here, before i forget. It turns out my
particular problem was hardware-specific, as ScottK suggested. So I
went to the #ubuntu-kernel channel, described the situation, and asked
how I could best file a useful bug. After looking through the results
of various tests they asked me to perform, they came up with the fix
for me, which worked! I now have headphones working again, as well the
the mic --- and as a bonus, Skype.

So after you have worked through the GUI tools, remember that we have
on our team some talented specialists. Just because they are experts
in the kernel doesn't mean they are gruff and dismissive! On the
contrary, they are friendly and helpful.

I did comment on a bug which I would not have found without their
help, reporting my success. So IF you have a ATI Radeon controller,
you might look at this bug:
https://bugs.launchpad.net/ubuntu/+source/alsa-driver/+bug/741825

Otherwise, visit the channel and see what help they have for you. :-)
