By the time you can press "S" to skip waiting, you are already seeing
plymouth. The actual raid assembly is usually done by the package mdadm.
Can you please run $ sudo apport-collect 1044598 to collect relevant
details about your raid array.
I am assuming that you are using software raid via mdadm, and not
fakeraid / external metadata raid via dmraid.

Title:
Grub does not mount raid 5
Status in “mdadm” package in Ubuntu:
Incomplete
Bug description:
I boot from /dev/sda which contains win7, hp recovery, etc. My raid 5
is on /dev/sdb, /dev/sdc and /dev/sdf and is mounted as /media/data.
During the boot process Ubuntu halts with the message that there is no
/media/data and I normally press "S" to skip waiting. Then I need to
mount the disk either with a mount command in a terminal winds or the
Disk Utility. It would be great if grub could start and mount my raid
5.
