technicaly they will be the same ... from an artwork POV they will be
different, whatever -desktop you installed last will set the default
bootsplash, on the ltsp level there shouldnt be any problem.

sure, install kubuntu, gcompris, tuxpain and teh kdeedu package ...

geerally the ltsp in edgy is far beyond the one in dapper (using local
device access on the clients, providing a default configuration, being a
lot less memory hungry due to network swap)
you dont even need edubuntu for an ltsp install, the steps described on:
https://help.ubuntu.com/community/UbuntuLTSP/LTSPQuickInstall
should give you a running setup.
