gthumb and thunar are using the same MIME-database. If you tell thunar
that a filetype can be opened with another program gthumb will give you
this choice too.

Otherwise you have to edit the file

  /home/<username>/.config/mimeapps.list

E.g.: If you want xpaint as one option to open png-files, you have to
expand the line:

  image/png=kde4-kolourpaint.desktop;eog.desktop;gimp.desktop;

to:

  image/png=xpaint.desktop;kde4-kolourpaint.desktop;eog.desktop;gimp.desktop;
            ~~~~~~~~~~~~~~~
