Don't confuse Ubuntu maintenance with Upstream maintenance, best
practise is to care about what's going on at https://www.kernel.org/ .

JFTR kernel files are located in

/boot
/lib/modules

The packages likely install files to
/lib/firmware/ too, but not necessarily to /usr/share/doc , but Ubuntu
seemingly does http://packages.ubuntu.com/ .

In /lib/modules/KERNELVERSION/ are directories and/or links.
You might or might not have build , ... , extramodules , links or
directories.
For Ubuntu there likely are build or source links
to /usr/src/linux-KERNELVERSION.

Assumed you purge a kernel and there still should be
a /lib/modules/KERNELVERSION/ directory for the purged kernel, then
it's likely regarding modules build by dkms, that were not part of a
kernel package.
