What version of Xubuntu are you running? Until 11.04 the editing of
menus was a bit tricky (Xfce 4.6 didn't have a menu editor). With
11.04 you can now use the regular menu editor for Gnome, we've been
recommending "alacarte"

Xubuntu ships with lighter weight applications than standard Ubuntu.
If you want to install Gnome apps just install the ones you want from
the software center.
