There should be a Sound Card Properties menu item (under edit) that will 
allow you to change what controls are visible.  To listen to the 
microphone input you  should make sure its not muted.  To record you may 
have to click the Rec button under the Capture slider.

  You may also want to try the gnome-alsamixer package as it seems to 
allow more control.
