According to your logs, you seem to be running the -intel driver, no?

Entirely possible.

Something is definitely crashing either X or the kernel and causing X to
restart. So that's certainly one issue you'll want to investigate. The
other issue is X not starting up without a monitor attached; I'd think
this ought to work. Probably worth filing a bug upstream.

I'm curious that you believe it to be an nVidia graphics system when the
logs say Intel. Do the systems have an onboard graphics as well as a
graphics card? (Not that it should matter, but could explain the
discrepancy in the log.)
