Ask them for a test print that you can check (and maybe even sign)
before they go into production.  Of course it doesn't have to be really
printed using an offset press or anything (that would be very expensive
for 1 page), but they should have a way to make a prepress preview print
on a printer or something, using the same RIP (the software that
converts PostScript/PDF to the actual printed image) as they use for the
real printing.
