you are probably using a third party repository to get those release
candidate, since neither mantic, nor noble provide wine 9

FWIW I'm using wine-staging on a rolling release and even this version
is < 9, but actually it's flagged as out-of-date.
$ pacman -Q wine-staging
wine-staging 8.21-1
While there's nothing wrong with using the development or staging
branch, consider to downgrade to the stale release.
