What follows is *indirect* advice, Like you, I have a bunch of computers
with varying specs (not as many as yours). The following anecdote might
prove helpful for you in your current situation:

This weekend's project was the repair of a Dell Optiplex 755 (small form
factor Desktop) which had a faulty 1TB HDD. The biggest problem was getting
into the computer itself, working out how to remove the HDD, working out
how to remove the original HDD and putting the (recently tested this
morning) replacement HDD in. This was done methodically, with the making of
notes, sketches etc, research of the topic on Google and the use of a very
helpful YouTube video.

I (and a friend) take in unwanted/broken computers, refurbish them with
Linux, and pass them on to people in old people's homes or people with
mental health problems (or their family/carers). Because of this, I have
allocated an A5 journal/notebook to my personal computers and they
effectively act as a computer log book.

I use whatever kernel the Ubuntu installer provides as default. Your above
approach seems to be very sensible - go with defaults and adapt where
necessary :)
