I do the same thing, not as network-accessible drives, but as
external drives that I plug in once a week and back up to.

I use Ext4 because it's a native format. Since you're backing up only
Ubuntu files, that would be a gentle and reliable way to do it. It can
be done with NTFS, but requires a special driver that has some
limitations and, from what I was able to find out, risks some data
loss. I could be wrong about that, though. You'll want to do your own
research to determine the best format for your use-case.
