Ubuntu 20.04.3 desktop (Cinnamon) - SSH disconnects when user logs off the desktop!

You did something wrong.  I imagine thousands of server systems are
installed every day and I don't recollect hearing of any instances of
discs being wrecked.
Though by wrecked I presume you mean overwrote, not broke the disc.
