Correction: The data of several apps is not included by an _iTunes
backup_. Using iTunes, it's usually possible to save data by _file
sharing_, too. However, Apple support tends to claim that an _iTunes
backup_ does backup and restore everything, but that's wrong. Some data
needs to be backuped by iTunes file sharing, via USB to an external
drive, probably by some cloud thingy (I don't use clouds) or some data
even requires to be backuped by email ... yes, the only way to copy the
data to another device is sending an email. Some apps don't provide any
way to save and load/backup and restore data, at best those apps are
audio units and allow to save data via a host application, but even
this has tons of pitfalls, that could make it fail.
