Take a look if the wanted feature is supported by

  View > Filer System Support

When installing packages Ubuntu defaults to install hard dependencies
and recommended dependencies. By default it does not install suggested
dependencies. Some missing features might be available after installing
suggested dependencies, see https://packages.ubuntu.com/xenial/gparted .

It might be that gparted doesn't support the wanted feature. A command
line tool might provide it, or Linux might not provide it at all.

Btw. I dislike to use exfat to share data between Linux and Apple.
Don't you prefer file systems that support Unix/POSIX permissions for
that purpose, too?

At the moment I'm using hfs+ to share data between Linux and Apple.
However, each time the drive was connected to the Apple device, I need
to run

  fsck.hfsplus $(blkid -Label)

when using it with Linux again. When not doing so, the drive tends to
suffer from input/output errors. Apart from this annoyance it works
without issues and I never got input/output errors after running
fsck.hfsplus.
