I'm using

Icon=/opt/gr-55_floorboard/images/windowicon.png
X-Window-Icon=/opt/gr-55_floorboard/images/windowicon.png

usually just

Icon=/path/to/the/icon/foo.png

or if it's in a common icon path just

Icon=foo

without path and .png works.

You also could try

Icon=foo
X-Icon-path=/path/to/the/icon
X-Window-Icon=foo

Consider to post the complete desktop file.
