A soft plastic keyboard protector makes almost any keyboard silent, or
at least much quieter. You can get projected keyboards that have no
real keys at all; projected on felt they are truly silent.

A trackball doesn't scratch or scuff, but test candidates for "rumble".
In general, the larger the quieter. Most systems have a hover-to-click
option for people with disabilities - use it for a silent click. A
trackpad can click with a tap, also silent.

Cut your nails, wear wool or cotton :-)

If recording sound, you will almost certainly not be able to use any
standard built-in A/D hardware or cheap microphones; you will
guaranteed pick up noise from the electrical environment inside the
computer.
