When you install ubuntu from the original iso, it does ask for a user 
and password and should put you in at least these groups:

macmike adm cdrom sudo dip plugdev lpadmin sambashare

If you select ssh server and lamp when you install, it should install 
ssh server correctly and ask for the mysql root password, and add you to 
the correct groups. All the issues you have makes me wonder how you 
installed...
