/etc/init.d/postfix not stopping postfix

Are you running "/etc/init.d/postfix stop" as root or "sudo
/etc/init.d/postfix stop" as an admin user?

What's the ourput of "[sudo] postfix status" after running the above?

It's better to use "[sudo] service postfix stop", it, for example,
sanitizes the environment and changes the working directory to "/".
