OK, but can you be specific about the menu? Do you mean PulseAudio Volume
Control? Or What?  Where do I find the menu that you see?

On my machine there's no generic 'USB Audio Device'.  Devices are
identified explicitly by name e.g.

GF119 HDMI Audio Controller
QuickCam E 3500
Audiolab MDAC

It's the last one I'm trying to use, but the options for it are given only
as:
Digital Stereo (IEC958) Output
Analog Stereo Output
