Complex mutli monitor setup

Hi, I am setting up a computer to be used in a cinema. We have a dual
head Nvidia graphics card. In windows it is easy to set it up so we
extend the desktop and have different resolutions on watch monitor, is
there a way of doing this on Ubuntu.
To go a little further into this one of the heads is connected to a 2k
monitor. It runs at a resolution of 2048x1080 and spooky windows
recognises this EVEN WHEN THE PROJECTOR IS TURNED OFF! Ubuntu seems to
just go into mirror mode, it does not seem to recognise projector even
if it is turned on;(.
Ultimately we need to mirror one display (the one connected to the
projector) but have one used as a normal computer monitor. For this
there is a video out on the graphics card (would like to output video
signal that mirrors the projector). The other option is to put in
another graphics cards, I have one that has video, DVI and VGA out.
