Oh, absolutely, yes!

But I regularly hear of people installing vanilla Ubuntu & then adding
their choice of desktop, seemingly not realising that it's available
pre-integrated. E.g. (if you will forgive me plugging my own article)

No reason not to just do them as a 2nd stage.

I saw a Fedora box a couple of weeks ago with about half of GNOME 2
installed, because the user picked the wrong metapackage. There was
enough to log in, open terminals and some other apps -- but no panels,
no way to log out and so on. It's easily done.

Installing the /right/ metapackage as a second step will just "fill
in" the missing pieces, as it were.
