This means grub is installed and has found the kernels and suchlike,
so there's no need for update-grub or anything like that now.

This sounds like you've just not got a countdown configured; which
version of Ubuntu are you running? This'll suggest how your grub
config is laid out and so we can more precisely suggest which files to
edit and where.
