Still, "apt-get install ubuntu-desktop" adds everything you'd get when you install the Desktop version, like Bluetooth and the hundreds of other unneeded background services. Be easier to just install the Desktop version and then disable Network Manager. You'd end up with the same thing, but with less effort.
sudo apt-get install --no-install-recommends ubuntu-desktop
That creates a more minimal install of Ubuntu without Network Manager. Although you'll need to install a few things by hand for a more complete system. I have a list of the steps to take, but installing from scratch might not be the intent of the OP.
