migration from Windows to Ubuntu: Thunderbird data, camera software, desktop

I need to migrate two family members from Windows 2000 to Ubuntu. I
think I know how to move most of the data, but I have a couple of
questions.

Can I just copy the contents of their "Application Data\Thunderbird"
directory into "~/.thunderbird", or is some twiddling required?

One of them is used to the Canon software that downloads photos from
her camera --- what Ubuntu package is recommended as an easy to learn
replacement for that?

Should I set them up on Unity? (Controversial one, that --- I don't
use it myself, but I want to reduce tech support overhead.)

Thanks,
Adam
