You forgot to add a couple of important steps.

When you start alsamixer you need to press F6 and select the sound card 
you are using, and then press F5 to see *all* the available settings one 
can play around with.

The other is that when you start alsamixer you may not be able to see 
all the settings because pulseaudio is interfering with alsamixer - 
although this interference is becoming rare but could still occur on 
some set-ups. If this happens then disabling pulseaudio (even if it 
means removing it thru the software manager). Once alsamixer is 
correctly set then one can bring pulseaudio back (ie re-installing it).
