Thanks.  I'd check it out, but having switched to the old compose, I
don't see any obvious way to switch back.  From experience, I know it
will be offered to me in a day or so.

Okay, got it.  Returning is not offered on replies, but is offered when doing a new compose.
I see the subject thingie now -- only it's called "start a new conversation (new subject)"
