I've been using Gtkcdlabel for the last years. Must have made hundreds 
of covers with it. It's a GUI frontend to cdlabelgen, which you'll 
probably find in the Ubuntu repos. From there, check out the project 
website, where you'll find the software in various forms: source, RPM, 
DEB. IIRC, you'll also have to install python-cddb for automatic cover 
production.

(I published an article about Gtkcdlabel in the french (paper) magazine 
Linux Pratique, back in 2005.)
