How can I go back to Ubuntu classic from Unity in 11.10.

No. It's not so much Gnome 2 as Gnome 3 bent to look a bit like it. It
has all the same major differences as Gnome 3, so you're likely to lose
any customisations that you can no longer make under Gnome 3 anyway,
and much of the panel's features.
